Trendy CauliCous

This is very on trend right now and so easy to make it didn’t seem right not to add it to the collection.    It’s a great alternative to couscous or rice and great for a Fast day.   It’s easy to make (and if you really want a simple solution you can buy fresh from most supermarkets). It doesn’t really taste of cauliflower once it’s cooked and if you mix in some stock or herbs it will take on other flavours.  Go on, if you haven’t tried it yet have a go.  You’ll be pleasantly surprised and so on trend darling. Here’s a few variations but there are many more…

Plain Cauliflower Couscous

Serves 2;  calories per serving: 50

ingredients:

  • half of a large cauliflower (around 5 oz) finely chopped or cut into florets and pulse in a food processor until it resembles the consistency of couscous

cover and microwave for 3 minutes on full power.  Cook for a further 20-30 seconds if using 600w 

stir and stand for two minutes and serve.  

Coriander and Lemon CauliCous

Serves 2;  calories per serving: 50

ingredients:

  • half of a large cauliflower (around 5 oz) finely chopped or cut into florets and pulse in a food processor until it resembles the consistency of couscous
  • one tbsp chopped coriander
  • juice from one lemon

cover and microwave the cauliflower on full power for 3 minutes.  Cook for a further 20-30 seconds if using 600w 

stir and stand for two minutes then stir through coriander and lemon juice. 

Herby CauliCous

Serves 2;  calories per serving: 50

ingredients:

  • half of a large cauliflower (around 5 oz) finely chopped or cut into florets and pulse in a food processor until it resembles the consistency of couscous
  • 1 tbsp chopped fresh herbs, such as parsley
  • 1/2 tsp of veg stock (we use low sodium bouillon)

cover and microwave the cauliflower on full power for 3 minutes.  Cook for a further 20-30 seconds if using 600w 

stir through veg stock and fresh herbs.  Stand for two minutes and serve
