Cottage Cheese Parcels

Lettuce with cottage cheese is great at under 100 calories for a snack or part of bigger dish but on its own for lunch left me hungry and craving comfort food. I’d give this ‘meal’ a Feast rating of 1. If you need quick snack then these would be good, a sweet little parcel, and they’ll leave you enough calories for a filling fast day meal

Recipe: serves 1;  calories per serving: under 100; Feast rating: 1 (1 = left me empty, 5 = full to the brim)

Ingredients:

  • 4-5 baby gem lettuce leaves
  • 1 tbl spoon of low-fat cottage cheese

Method:

  • take cottage cheese and add to the lettuce leave bowls. Use the leaves like a wrap or pitta bread and enjoy
